Growing up in South Texas, with its ranch food and ubiquitous Tex-Mex, I learned at an early age to like beans, since they were either a side dish (refried beans) or main dish (chili) for just about every meal. Now, as a vegetarian, I rely on them as my main sources of protein and fiber. But it can be hard to find good recipes and restaurant dishes that are bean-based. So let's honor the lowly legumes this week with a few articles on why they're so great.
