As old as I am,
I never heard of doing the wet towel thing, but I will remember after seeing this. At Fire Fighting Training school they demonstrate this with a burning deep fat fryer, on the fire field. An instructor dons a fire suit using a 10-ft pole (with an 8 oz cup at the end) to toss water onto a grease fire. The results got the attention of all the students!
Water (being heavier than the oil) sinks to the bottom where it instantly becomes superheated (creating steam). The explosive force of the steam
literally blows the burning-oil, up and out. On an open field it becomes a 30-ft fireball, resembling a nuclear blast. Inside of a kitchen of course, that fire ball hits the ceiling and then quickly fills the entire room.

Also:
DO NOT throw SUGAR or FLOUR on a grease fire !!!!

(One cup creates an explosive force of two sticks of dynamite)
